Perfect cocktails in perfect Devils Dyke pubs

Summer is almost upon us, and like everyone else we at the Shepherd & Dog start to think about happy times and sunny days spent in our large beer garden. But sometimes it can be fun to forget the beers and focus on something a little more exotic instead. And what could be more exotic than a cocktail or two?

Some of the more popular cocktails have equally exotic names, but not many people know how those names came about. Did you know, for example, that a piña colada is so called because the phrase means ‘strained pineapple’ in Spanish? Thought to emanate from Puerto Rico, it usually consists of rum, cream of coconut and pineapple juice.

If you’ve ever wondered who Tom Collins was, and why he has a cocktail named after him, the truth is he doesn’t. Or at least, there was no Tom Collins in the first place. There’s a lesser known cocktail called a John Collins, allegedly named after a head waiter in London. It features London gin, lemon, sugar and soda. When the London gin was switched for Old Tom gin, the name Tom Collins was born.

A refreshing combination of rum, orange curacao, lime juice and orgeat syrup, the Mai Tai is one of the best loved of all summer cocktails. Pronounced my tie, it was invented in either the 1930s or 1940s, depending on who you choose to believe. And as for the name, Mai Tai simply means ‘nice’ in Tahitian. Here at our idyllic Sussex gastropub, we think it’s pretty nice as well

Named after a village in Cuba, the daiquiri is a group of cocktails rather than a single drink. It generally consists of rum, lime juice and sugar, plus any of a number of fruits to give it a distinctive flavour. Some of the popular options are banana, strawberry and avocado. Named after the celebrated author Ernest Hemingway, a Hemingway daiquiri has white rum, lime juice, half a grapefruit, six drops of maraschino liqueur and no sugar.
